Origin .The "Ste Maure de Touraine" comes from several regions : Saint Maure en Touraine, Indre et Loire and Indre.
.In the middle Age, it was already one of the favorite cheeses of the powerfull people and good tables still present it nowadays.
.The most striking point is the fact that a straw is included in it, more to enable a fast drying and to strenghten it, rather than to allow the cheese to fly when wind is blowing (as an amazing legends says, speaking about its heavy weight for a goat cheese)
Choice .White/ivory paste, compact, with goat flavours fully developped (almost strong), skin slightly blue
.Best seasons : end of spring, summer, beginning of fall
